I never thought how easy it would be to make a sausage with your own hands. Remove from the box, wash and dry all detachable parts with soapy water, wipe the rest of the unit with an antibacterial cloth, secure the filler to the table or countertop with the clips provided, fill the hopper with sausage mix, attach some casings. onto the stuffing tube and start rotating. Dead easy. Read the directions, paying special attention to the part about adding water to the sausage mixture before stuffing the casings. The device is beautifully made and has industrial strength. It will serve you and your children for the rest of your life. I haven't switched to stainless steel stuffing tubes, and the plastic tubes that come with the unit may be the only thing that can crack over time. But at 66, I don't worry about that. Oh yeah, order some food grade lube for the o-ring that goes with the pressure plate (not sure which name is correct). As a result, the plate slides over the funnel when the crank is turned. Nonstick cooking spray might help, but I haven't tried it.
