
This is by far my favorite cake pan and I make a lot of cakes. What makes it especially great is its weight and thickness, resulting in a heavy browning of the bottom crust. I also like glass pie plates, but I feel like an aluminized steel pan works even better. I can actually lift an entire cake out of the pan without sticking once the cake has cooled. Try making this in a glass cake pan. I also like the sloping sides of the pan and the flared rim, great design for crimping and baking the dough to keep it in place.
