own another brand of Willam Sonoma knives which I just love. When I saw this knife at half price I knew I had to add it to my knife block! Chinese knives have very sharp blades, are light and this special handle is very comfortable in the hand. I never tire of slicing and dicing with a China knife, and the sharpness of the blade makes the job almost effortless. Chinese knives are ideal for cutting vegetables and fruits. This particular knife is well balanced. It is great for mincing or finely chopping garlic cloves. It works great when coring or peeling fruit. The blade itself is longer than most pair knives and I like the size, especially the handle. However, I find that using honing steel keeps them in perfect shape without having to transport them for sharpening. This is a must buy for anyone new to Japanese knives. German blades are heavy and strong, ideal for cutting bone and other jobs that require a heavier knife. My German blades need professional sharpening once a year. Given the sharpness and lightweight ergonomics of these Chinese knives, they've become my workhorses, my favorite knives for everyday chopping of vegetables and fruit.
