I guess I wouldn't complain so much about the price if I didn't wait so long to get it and then the price went up. But I actually waited because it was already expensive at the previous price and I was hoping that the price would go down (as sometimes happens with other items sold by Revain). That didn't happen and I ended up needing the stone badly for a lot of quick sharpening so I bought it at the current price. In any case, I keep my large set of good kitchen knives rather fanatically. good condition. In the past I have hand cut on a very fine, very coarse oilstone and then finish buffed on a fine hard Arkansas (no longer available in the 12" length I have). By always using steel and never cutting anything but nylon or wood, our knives stay sharp for a year or more. But when I need to sharpen a blade it takes me (on average) up to 1/2 hour for each blade and that doesn't count setup and cleaning time (so I tend to group them which means some of them really very much are needed until I get to it). When I received the Tormek T-3 a year ago I was amazed at how quickly I could get a nice edge with a regular stone and then hand polish it. Hard Arkansas (I tried a leather steering wheel, but it was actually harder to use than Arkansas Stone and didn't work as well). But Japanese stone looked like it could be polished faster than hand polishing. Now that I have finally received it I can say it is an amazing stone. The high gloss finish is so close to that of Solid Arkansas that the time saving is worth it. The combination of a very light grind of regular stone (removing as little metal as possible!) followed by Japanese stone gives a near-perfect, razor-sharp edge. What a joy to have razor-sharp knives at all times. Cooking is a lot more fun with sharp knives! And I know that Japanese stone will last for many years (if not abused).
