I'm a big fan of this mandolin

When I tossed the first mandolin I bought in my goodwill bag, I vowed never to spend money on another. However, I will confess that I was tempted by those super expensive models sold in malls, but I didn't want to risk it. I can't remember how I came across this, but I'm so glad I did. As a vegetarian, I cut, dice and slice a lot. This little gem sped up my process and gave more consistent results, although I thought I had developed pretty good knife skills over the years. Its main limitation is the maximum thickness of what you want to cut. However, with this limitation, you can get multiple thick slices and anything from a very thin cube to a fairly large cube. Rough dice require a different technique, but there are many demos on YouTube teaching you how to achieve this result, as well as many other ways to use this mandolin. I confess I haven't had much luck using it properly on carrots, celery or radishes. They have to be put in the holder, they will sway and fall out. I just can't get it to work. I came up with a different method for carrots and celery that works well but requires extra care. I hold a stick or two on the mandolin and slide it back and forth along the blade until I reach the end. This works very well. You probably shouldn't try it without protective gloves, if at all, but it works and provides more uniformity that makes for more even cooking. Easy cleaning is important and this one is designed to be easy to clean. Maybe not as easy as it looks on these YouTubers, but easy. Basically, you need to wash it off before the food dries on it and check the V-shaped part of the blade to make sure nothing gets stuck there, as can happen with softer-skinned foods. It's a minor thing compared to the nightmare of my first mandolin. I realized how happy I was with this mandolin when I started using it for one-off tasks like chopping onions for a veggie burger. I hope my review helps you decide where this device might be what you are looking for.
