I used to mostly use Silpat baking mats but I was looking for a cheaper option. At the time of purchase, a Silpat mat cost twice as much as two Amazon mats. They were definitely worth a try. In fact, the first time I used this mat, I noticed that food stuck to it. I don't remember if this has happened to my Silpats, but I've found that the problem gets better with use. Over time, these mats will absorb some of the oils from the food and become increasingly non-stick. They darken with age and I eventually throw them away when they start breaking (usually after a year or two of use). I'll have to see how long they last for comparison. Tips: Reserve a mat for sweets and one for spicy foods, as these will absorb flavors and odors that can transfer to other foods. I would buy them again.
