These gateways are perfect for my fermentation projects. I used them on liter jars for lacto-fermented pickles. I could cook them with regular glass lids. It works out. Using these locks removes carbon dioxide and improves the flavor of the end product. I also sometimes cook a gallon of chopped cabbage for sauerkraut to pack in four quart jars. This project is always easier to do in liter cans and these gateways do exactly what I want for finished sauerkraut. The buyer should simply expect liquid to slosh through the sleeve and onto the cap within the first day. This excess brine should be visible, and if not you should recheck your solution.
