Handy digital thermometer but not without flaws

Pretty decent digital thermometer for grilling, smoking and cooking meat. The silicone/rubber sheet feels nice and is very comfortable to grip. The collapsible probe is spring loaded and can be mounted in 5 different angles/positions (including fully folded for storage and security). The block itself under the foil is cheap plastic and painted silver. It's strong and sufficient. It is powered by two AAA batteries (not included). I like that the digital display is backlit with blue light, which makes it easy to read in low light. There's also a built-in LED flashlight on the front for late-night grilling. Its brightness is sufficient to illuminate the flesh in front of the probe. There are four easy-to-press buttons on the top of the device: Light, Hold, Β°F/Β°C, On/Off. The hold button doesn't actually hold the current temperature. Instead, it switches between the current, minimum and maximum temperature. Accuracy is around 4Β°F (36Β°F for ice water and 208Β°F for boiled water tests), which isn't bad for checking the readiness of grilled meats. However, it is not quite instantaneous as advertised. Instead, temperature convergence takes an average of 15–20 seconds. Even then, the temperature fluctuates about every second, making it a bit difficult to determine the actual temperature. There are some issues that deserve a few stars. Above all. The probe is partially recessed into the groove under the thermometer when fully folded. It can be difficult to pull out and unfold unless you have very long nails. Second, the temperature takes a good quarter of a minute to converge and then bounces around it, making it difficult to take readings. Although you can press the hold button to display and use the maximum temperature. Finally, the orientation of the digital display makes this thermometer pretty much right-handed only (the display is upside down when used for the left hand). All in all, this is a decent and handy digital thermometer for checking grilled meats, especially at a late night grill. The accuracy is sufficient. Although I would like the temperature readings not to fluctuate that much. It's not perfect, but it's right.
