This is a non-stick frying pan UNDER vegetable oil. Eggs fall out easily when the pan is inverted. This pan has no lid. To fully cook the egg whites in this pan, brown the bottom before the top is fully cooked. I've come to the conclusion that a lid is needed to retain the heat and cook the egg whites more evenly. I made the lid out of 3/16" Aluminum (6061). It works better than I expected. I heat the pan to 350-370 F over medium-high heat, baste with non-stick coating, pour in the egg whites, cover and cook it for 4 minutes, egg white is always perfect.
