It does exactly what its name says.
I was watching an unrelated video about the mass production of French pasta in Korea. They lay a dozen whole eggs in their shells in large bowls. Then, to my great surprise and delight, they used this special tool to fish out the yolk and leave the albumen behind. Too risky for my clumsy hands but very impressed with the industrial use of this product.
