Very, very sharp! If you use it carefully, it will become your best friend in the kitchen. Peeling potatoes and carrots has always been a chore, so I just didn't usually do it. We ate unpeeled potatoes and carrots. But with this wonderful tool from Japan I can clean everything quickly and easily. Just apply the right amount of pressure depending on how deep you want the shell to be or how firm the shell is. Carrots and potatoes require a very light touch to get the job done quickly. Highly recommended!
