
Here's the thing, I made a pretty tasty quiche out of this thing. Everything was basically perfect (*minor oil leak). But when I went to clean up the springform pan later, I noticed that there was a crease on the bottom where the sheet metal was bent. I knew right away it would be a bitch to sort it out. Fast forward a few minutes and I frantically scrape the dried crust of dough and browned butter from that crease with a folded piece of paper while listening to The Clash at midnight on a Friday, realizing I might have an OCD problem. When I realized I intentionally baked the quiche without the bottom of the springform pan so it could expand on the bottom and cook properly, and blah blah blah. And that bottom part of the pan hides that crease, so that criticism is totally misplaced. It also negates the problem of oil leakage. I wanted to give 4 stars but I had so many emotions about this pan that I gave it 5.
