Perfection for baking sheets

I first bought a Wilton springform pan... one flaw - it discolored after the first wash, smells like coins and has a textured bottom that crushes the crusts. So after that skillet disaster, I wanted a quality springform pan, and here it is. It's easy to clean, doesn't stick (that's how my cheesecake separates on its own), has a smooth bottom for a perfect crust, and doesn't leak. Every cheesecake in this pan was flawless. How good this pan is depends on how weird you are.

Here's the thing, I made a pretty tasty quiche out of this thing. Everything was basically perfect (*minor oil leak). This springform pan is the worst I've ever had. First, it leaked when I first used it. Second, when I tried to get my cheesecake out of the pan, it was a mess! I've been making cheesecake for many, many years. This was the first time the crust stuck to the edge of the pan when I let go of it. I sprayed it with Pam! I knew I'd used enough…

Very happy with this frying pan! I bought this 9" springform pan from Cuisinart about 1.5 years ago for my 12 year old son who wanted to make a Christmas cheesecake. Cuisinart AMB-9SP 9" Chef's Classic Nonstick Bakeware, Split Pan, Silver Neither he nor had I ever baked a cheesecake or used a split pan so I really had no idea what to expect and was just hoping for the best. As a newbie I was surprised at how easy this pan was to use and how well it worked. I was expecting it to be a lot more…
