Review on Shun 300 1000 Combination Whetstone by Sandra Egan

If I can only own one stone, that's my choice.

I've had two of these and they are great for sharpening kitchen knives. Not everyone in my family takes very good care of our kitchen knives so the edges always get tangled. My goal is not to achieve a perfect mirror edge. This is a 300/1000 stone, which is enough for me to carve out scratches from people throwing my knives in the dishwasher along with my cutlery, and then give them a fairly sharp edge to cut through vegetables and other foods with ease. I have the time or desire to polish my kitchen knives with a 6000 grit stone until I find myself in it. If I did, it would hurt my feelings even more if I saw someone in my household ruin the rim again. Once a month or two I just soak it in tap water and wash all the knives. Works perfectly. If I need to replace mine, I'll buy the exact same stone again.
