I'm glad I read ALL the reviews on this pan! I AGREE that a good plan for preparing brownies is at the temperature listed on the package for about 25 minutes. I use a shovel to fill in the holes. I try to make a dozen not-too-large cakes because the mixture fills 12 holes to make a good portion of cake for one person. I sprayed my first batch with baking spray and dusted with cocoa powder (because a lot of reviews said the brownies stick to the pan). I will NEVER sprinkle cocoa powder again! What a mess! How hard it was to wash the pan! And I ended up throwing away a brand new sponge because it wasn't cleaned. For the next batch, I just drizzled vegetable oil into the pan. Then it was much EASIER to wash. But the square holes and the stitching around the holes require more attention when cleaning (I hand wash). The first batch of cakes slipped out for a reason. I didn't even try shaking them upside down on the second batch. I just used the plastic offset putty knife I bought from Revain here. I paid close attention to the size of the spatula to make sure it wasn't too wide to fit in the indentation and not too narrow to get under the brownie and pull it all the way out. It's black plastic from Pampered Chef. Expensive for what it is but I shopped in one place to get everything before the deadline.
