These pans will last a lifetime, it's that simple. I don't have the metallurgical terminology to fully analyze how they are made, you can of course do that on the Hestan website read. But what I do know for sure is that it's toxin-free and not fancy, which can be associated with non-stick surfaces. I also know that almost every detail is exactly how I want the pan to be. Steel, no visible aluminum. Flat rivets for easy cleaning. a cooking surface that offers fairly even heat distribution, with food being cooked just as thoroughly on the edges of the pan as it is directly over the flame. Widened rims allow for easier and cleaner pouring of liquids. The handles don't get as hot as the pan itself! efficient, fairly flat, well-fitting lids. beautiful, elegant design. and as a bonus, it's beautifully packaged, so makes a great housewarming or wedding gift! I don't like the flat arcuate design of the handle. It tends to be a bit more unstable than I'd like with a sweaty palm and a full pot. Without a non-stick surface, some dishes need to be a little more careful not to stick to the cooking surface. As far as cleaning goes, these pots are so pretty you want to keep them and I've found it's not as easy as I'd like. I rely on my friends the bartenders a little more than I would like to keep them looking new. Certainly very small complaints. When it comes to kitchen pots and pans, it's common to "get what you pay for". Quality pots and pans just do their job better and last MUCH LONGER than their cheaper counterparts. And the appearance of Hestan products in the best kitchens is also encouraging. If you spend a lot of time in the kitchen, if you can shell out bucks, I think you should do it to "go to Hestan".
