I've used this fillet knife for everything from trimming brisket fat to filleting fish. Perfect balance and correct blade curve. Can be easily sharpened into a razor blade. The price is fantastic for this quality. The handle is comfortable, ergonomic and non-slip. After repeated use, a quick flick of the Chef's Choice sharpener will bring it back to a dangerously sharp edge! One of the best I've ever held in my hands. And what a fantastic price for this quality and performance! A+++I would definitely buy it again if it ever gets abused enough that it's time to replace it. Highly recommended!
