The fillet knife is not very sharp, cuts the fish

The fillet knife is terrible. Generally not very sharp. Does its job but butchers your fish. I used it for the first time and my regular knives are much sharper. These knives must be sharper than hell. I guess I'll have to buy a pencil sharpener.

Great value and quality, a must have

Great knife, definitely needs sharpening after filleting a few salmon. I live in Alaska and this knife can cut through hundreds of salmon in one summer. No issues except that a sheath had to be included but that's ok, overall it's a good knife, definitely a must have for anyone who eats salmon.

Sharpness didn't last long

I was very impressed with the ease with which this blade cuts pork and beef for my smoker. However, after several uses, I found that I had to constantly sharpen the blade. Last weekend I smoked 12 pork thighs and had to sharpen the blade after removing the fat from each thigh. These were boneless. I'll look for something that holds the edge better.

Sharp but not good for cutting fish

I bought this to cut walleye, walleye and sea bass which I like to catch and sometimes leave to eat. This knife is sharp but could benefit from more blade flexibility like other specialized filleting knives. This one is a bit stiffer and doesn't "float" over bones and other hazards that should be avoided during slaughter. I found another filet knife that I like better but kept this one as a backup or in case I need an extra long filet knife.

This knife was sharp. I spent a minute sharpening it and then I was able to use it to shave the hair off my arm! My only concern is that it doesn't come with a sheath. I wasn't expecting a sheath when I ordered it, but when the knife punched a hole in my fishing bucket I was shocked/ticked/sad/confused. So I had to make a thin wooden knife sheath to take with me on a fishing/camping trip. Great for the kitchen! Need a case to take it on the road. I hope this helps you make an informed decision…

Good luck getting it out of the plastic wrap

Like the knife. It feels comfortable. On the other hand, the squeaky plastic the knife comes out of is dangerous. After reading all the reviews of people cutting their hands with a knife, I was paranoid wondering how I could remove the plastic without cutting myself. concluded that the edges of the squeaky plastic were probably sharper than a knife. Hell's hottest circle should be reserved for whoever dreamed up this packaging. OK, speak. i like the knife

I've used this fillet knife for everything from trimming brisket fat to filleting fish. Perfect balance and correct blade curve. Can be easily sharpened into a razor blade. The price is fantastic for this quality. The handle is comfortable, ergonomic and non-slip. After repeated use, a quick flick of the Chef's Choice sharpener will bring it back to a dangerously sharp edge! One of the best I've ever held in my hands. GREAT QUALITY AND GREAT QUALITY, NO COST

Mercer Culinary makes flatware that rivals its more expensive competitors (cough, couch handles, Wusthoff) without great expense. This is my second Mercer product and I am very happy with it. This knife is damn sharp and the edge retention is amazing. I just filleted a whole strip of walleye and some trout (about 25 fish) and I swear I could still cut a hair in the air with this sharp knife like a katana.
