Review on 🔪 Efficient Fillet Knife: Mercer Culinary Millennia Black Handle, 8.5-Inch Narrow Blade by Shane Sanchez

Mercer Culinary makes flatware that rivals its more expensive competitors (cough, couch handles, Wusthoff) without great expense. This is my second Mercer product and I am very happy with it. This knife is damn sharp and the edge retention is amazing. I just filleted a whole strip of walleye and some trout (about 25 fish) and I swear I could still cut a hair in the air with this sharp knife like a katana. I just love it, but would love it even more if they included edge protection or some kind of cover; Too bad Amazon doesn't allow sharing a star because I would probably take half for that.
