I'm not a professional BUT 40+

I originally inherited an old brazier that looked like this - it was heavier but wasn't like this 60+ years ago. Then I bought her. I then bought another fully dressed one which was insanely expensive for once a year. and it's MISSING-BAD. All the wonderful droplets evaporated and the turkey came out dry. Came back to it and the results were the best of the 2. I'm 18 inches and have not roasted a turkey over 14 pounds. So I can't comment on a larger bird. perfect size for my needs i didn't use a trivet either, instead i take rolled up aluminum foil (like a snake) and place it under both ends, then i use a big fat carrot in the middle (which is a nice drip/ sauce flavor). The turkey comes out good, and most importantly (to me) it drips, resulting in gravy (which I love more than the turkey itself). Now with COVID19 I'm taking a smaller turkey, 12-13lbs, plenty of GOOD turkey and Sauce for freezing for 2. And this list is always used. Happy, Safe and Peaceful Holidays to all!
