Review on Cangshan TS 1020885 Swedish Sandvik 14C28N Steel 17-Piece Knife Block Set with Walnut Handle by Anne Franson

Revainrating 1 out of 5

The edges are prone to micro-chipping, I don't want to eat food with micro-chipping stainless steel.

Really very disappointed.1) I expected it to keep sharpness for a very long time. They didn't hold the lead for as long as I thought they would. It held the blade maybe a little longer than my previous $50 kitchen knife set. 2) Also, you need to wash them by hand, which doesn't bother me at all, but these things need to be towel dried immediately, otherwise they will rust. and gets dirty very quickly. My wife let them dry in the dishwasher overnight and I started seeing stains on them. Not a big deal, I guess that's to be expected with all low chrome knives. Keep in mind that chromium softens the metal so it won't last as long, but chromium is needed to make stainless steel rust-free. Therefore, most high-quality kitchen knives need to be dried with a towel shortly after washing. 3) I have very, very serious problems with this. Microchips on the edges from moderate use. What happens if chips get into food? I do not want to eat food with Sandvik stainless steel microchips. If I put my finger on the side of the edge and run over it, very small metallic scales can be seen on my finger. Not cool at all. If that's usually the case with High Rockwell steels, I'd rather sharpen my knives every two weeks and then eat the metal flakes with my food. 4) The sharpener has a diamond coating, but what happens when the diamond coating wears off? Should I buy a new sharpening steel for $100? No thank you. Not to mention that maybe it's the diamond-coated honing rod that's causing micro-chipping? I'm not sure, but I'm unhappy with the microchips on the edges of these knives. The call didn't help. She wanted to replace the microchipped knives. But what if all the knives break off after my Revain return expires? In fact, there was no guarantee that the knives weren't chipped. Then the margin without retention was not really taken into account. And the answer to diamond coated honing rod wear was well, nothing lasts forever, you just have to replace it; and here's a spare honing rod for $90; It doesn't look like it's going to last a lifetime for me. I don't recommend these knives, I brought a $60 emojoy set of knives from Revain and they are actually way better than these knives.
