I ordered coffee beans and ground them in a bag with a small razor cut through the bottom 8 o'clock coffee bag. I contacted Revain and the return was smooth but they didn't ask for me to return the ground coffee. actually a light roast. I have no idea what the lightly toasted versions taste like! I bought it to experiment with cold brew coffee. Knowing that it takes A LOT of coffee to make a decent amount of CB concentrate, I figured I'd buy a good cheap brand that I like. that?) and a batch of Allegro Blue Nile whole beans (medium roast). In both cases, the cold brew coffee had a less acidic coffee "bite", however the "8 o'clock" version was much less flavorful than the (significantly more expensive) Allegro coffee. I suspect the "upbeat" branding is to blame for 8 O'Clock's "medium roast" coffee. It was almost a "medium roast" and close enough that the hot brew method with its stronger "bite" would mask it well, but the cold brew fails to mask the shorter and slightly lighter roast time. Pre-ground coffee could also have played a role. It would be interesting to see if 8 O'Clock's dark roasted flavors would be better suited to cold brewing. If I feel like experimenting, I'll try it. But I can't recommend 8 O'Clock Columbian Medium Roast for cold brew just yet. It does make a nice cup of hot brew though!
