It will take a few tries to figure out how you want to use it. Press firmly and you will slice the ravioli into individual pieces. Applying some pressure will create an indentation that you can later use to separate. It really depends on whether you cook them now or later. If you're cooking right away, squeeze hard so you don't have to try to fight them, and pull apart, which will pull them out of shape. If you want to freeze them, all you need is a little pressure because once frozen, you can easily tear them apart. I've also found that before I place the ravioli dough on the metal frame, I flour the side that will be in contact with the metal to keep the dough from sticking to the frame. The first few times I tried putting flour in the metal frame but it didn't work and I ended up having to struggle to get the ravioli out of the mold.
