I recently went on a keto diet and have been able to eliminate bread and other heavy carbs. But I really missed my chocolate! Chocolate is allowed on keto, but no sugar โ and even the 95% cacao bars I've eaten have some sugar in them. So I decided to make my own and these shapes made it a breeze. I just melted the Organic 100% Cocoa Baking Bar at my Wilton Patisserie along with some Cocoa Butter and Liquid Monk Fruit, and voila! Ideal. The molds are pretty flexible so I place them on a baking sheet to fill them and then put the filled molds in the freezer to let the chocolate harden. After curing, the bars were easily released from the molds. The bars go soft quickly (I live in a warm climate), so I keep them in the freezer and just break them off as often as I want when I'm in the mood for chocolate. The only downside was that the molds were harder to clean than I expected. The part where the chocolate was supposed to go didn't leave a mark after I removed the tiles, but the spots where I spilled the chocolate outside of those areas required some work. However, I highly recommend them and would be very happy to buy them again.
