Used for 7.5lb Prime Christmas Rib. I calibrated it in ice water first. I chose medium, pulled it out at a temperature of 120 degrees and let it fry for about 20 minutes. he went up to 135 I think while he was resting. It should go back to 120 before carving. but it would take much longer. Cut at 130. It was more of a medium rare than a medium rare. Next time I'll probably pull it out 115 degrees. and leave on for 15-20 minutes. All in all it worked fine.
