Do not purchase this item if you intend to use the temperature probe to stir the contents inside the pot.

I bought this to make caramel because I wanted accurate temperature readings. I made 3 batches and the caramels came out as expected. However, the adjustable head makes the device extremely heavy. Caramel needs to be stirred, which will raise the temperature. The clamp doesn't hold the pan firmly on the stove, so the slightest touch of the probe on the cooking spoon causes the device to tip sideways and bounce from pan to stove. This has happened twice on every batch I've made - and yes I've tried tightening the clip. Either I have a defective clip, or this unit is poorly designed - I think the latter. I'll probably go back to my $5 candy thermometer that I bought at the grocery store and it attaches perfectly to my pans.
