This works well for separating eggs, although I think the age of the eggs has little to do with it. It is much better constructed than the traditional egg separator. If the yolk is very thick, it may break if you shake it too hard. The mini whisk is very good and has gone through my dishwasher 2-3 times without rusting. The spread is thin and feels cheap, but actually works very well in delicate wrappers (melted butter on buns). Overall VERY happy with this set. TO UPDATE. I still have problems with broken yolks. Downgraded to 4 stars
