I bought this oven thermometer because it got good reviews on America's Test Kitchen. It was a big mistake and this unfortunate decision tormented me for several years. I trusted that the new oven thermometer was accurate enough and it indicated my gas oven was 40-80F. below the set temperature. I was concerned about (alleged) variability and inaccuracy, leading me to distrust my oven and always set it 40-70° higher than the recipe called for. For three years I thought my cooking skills had declined because something went wrong. On a whim, I bought a $3 alcohol thermometer from Goodwill that has a range of up to 450°F, which due to its physical nature tends to be more accurate (the expansion of alcohol in a calibrated capillary is simply a better gauge than a simple bimetallic spring ). Wow - I found my oven's thermostat to be accurate all the time, and not like that. Variable. Rather, both the inaccuracy and the variability were entirely due to this piece of junk "ProAccurate" oven thermometer. Do not buy if you don't want your cooking and baking skills to be affected.
