The quality and durability of this item is fantastic. It's very spicy, I mean VERY spicy. When I first used it, I learned it the hard way. You gotta respect this beast. offer for everyone. The platform can be raised and lowered to adjust the thickness of the slice. If you raise the platform all the way, it will rise high enough that the blade is no longer dangerous. You can then clean it up and deal with it without incident. Always do this for security reasons. I recommend this version with drip tray. I keep the blades and hilt there. This is very convenient even if you don't use this tray to catch food. Some other brands have some design conveniences that this device doesn't have. It has no "legs" to hold it while cutting. It has no grooves to fix it on the bowl. It has no lever to raise and lower the cleavers. However, it is a durable and well-designed product that will last for many years without issue. These other traits have strengths and weaknesses. So that's not a complaint. It's just a choice. It is a durable and very sharp quality product that can be customized for almost any purpose. i really love it
