size 8"x12" is suitable for most animal parts. I cut some bags in half to make two smaller bags (8" x 6") for small things like tenders. Since I have to butcher the whole animal at once, they should keep well in my freezer for up to three years. During that time I've had a very low failure rate and I attribute this to the wear and tear on the packaging when I was put in the freezer. I've used other brands and found them no more prone to abrasion than others and less than some, including the commercial bags my ex butcher used. If I'm sealing something that has a cut bone exposed (e.g. bone-in chops), I wrap the piece in deli wrap first as a protective layer.
