Hello, I'm just a hobby sharpener at home, although I craft my neighbors and co-workers' blades to keep handy. I have 3 other stones that I use for sharpening. My favorite brand is Chosera - 700, 1000, 3000. I finally have this 8000 grit Naniwa stone and it really makes a big difference. The stone seems very smooth but as you use it you can see the metal coming off (the gray metal floats above the stone in the water) so you know it's working. If you look at the blade you can see that after using 8000 grit the edge becomes mirror smooth. I usually end up with a leather belt and find the knives are sharper and the edges look fantastic. I am very happy that I bought this stone.
