Convenient - and no more brown sugar cubes (review change - see UPDATE below)

Packaging of brown sugar has improved somewhat in recent years. When they first started selling brown sugar in resealable plastic zip-top bags, it seemed like a win at first, but then I noticed that small grains of sugar were getting into the zip's channels and clogging it. Also, when a kid or my husband reached into a bag of sugar to add oatmeal, they often didn't bother to remove the sugar from the zipper and seal it carefully. So what did I find the next time I used brown sugar in cookie baking? A bag of mixed-size brown sugar lumps, or worse, a bag of rock-hard sugar. This brown sugar jar from Prepworks is great for storage. A 2-pound bag of brown sugar fits easily in the canister, leaving enough room at the top to scoop a measuring cup and grab the sides. It's not easy to pack a cup-sized scoop tightly into the canister, so I usually opt for half a cup-sized scoop or less. A small terracotta disk needs to be soaked in water for 15 minutes before use. , and then the instructions recommend pressing it into the center of the brown sugar. That surprised me. Based on the pictures on the Revain product page I assumed the wet disc would be placed back onto the clip on the underside of the lid but this was not in the instructions I received. The instructions state that the clip is for disc storage only between uses. Love the fact that the canister is BPA-free and dishwasher safe (but not the disc). If you have more than one, the cans can be stacked on top of each other and make a very stable and well-made impression. Another good point? Of course, it's a lot more noticeable on a pantry shelf because I no longer hear, "Hey Mom, where's the brown sugar?" I just have a few minor issues with it. First, while it's easy to unlock, it doesn't feel like it will re-lock when you close it. No clicking or clicking. Don't get me wrong - it's closed. It just doesn't feel like what it is. And second, the sugar turns white immediately around the terracotta disc. Why is? UPDATE: I'm downgrading my rating from 4 to 3 stars. I used this brown sugar saver for several months before writing my review. A few weeks later, in the summer heat and humidity, the sugar immediately surrounding the terracotta disc not only turned white, as I mentioned, but also became quite hard. There are still no random little hard brown sugar balls in the container; but when I pull the slice out it gets coated on all sides with about 1/2 inch of hard *white* sugar. I still like the real container, but I'll try without the soaked disc for a while to see if the sealed container alone works well enough to hold the brown sugar well.
