I have two Microplane food slicers, one with a straight blade and one with a V blade. I prefer the V-Blade version. What I like: It's lightweight and easy to use. The blade is very sharp and appears to be replaceable. Blades are secured with four (4) Phelps head machine screws. I don't know where to buy replacement blades. A slicer is small enough to fit in a large utensil drawer, while a mandolin typically takes up space in a closet. The thickness of the cut is easily changed using the large dial on the bottom of the tool. It is very easy to clean, although it is recommended not to wash it in the dishwasher. What Needs Improvement: Mandolins and slicers of this type almost universally use a hard plastic tool to hold food and protect fingers. Looking at the reviews of these tools, it's almost as common that most people see these safeguards as insufficient protection. In my experience, most foods don't hold up well and this encourages not using a safety device. I use cut resistant gloves to solve this problem, but this food slicer rips them up pretty quickly. I guess I was a bit careless with the protective layer on my arm. This resulted in not using the (ragged) glove or the accompanying hard plastic shield for Thanksgiving, and although I was careful, I cut my middle finger and nail about halfway down the middle. Four weeks later the toe is still healing. My temporary solution, which works fairly well, is to: (1) use steel or aluminum ice cube tongs to hold the piece of food; and (2) use up some excess food. For example, if the recipe calls for four sliced radishes, I measure the weight of four whole radishes on the scale and write it down, five slices of radish. I then re-weigh the cut pieces in the slab using the tare method until I have enough pieces to give the total weight the recipe calls for. You can find ice tongs online or at most kitchen supply stores. With these reviews, rest assured that most of them have fairly well-defined cutting tool designs. You need to focus on the security tools that come with the tools. A little creative design effort with lots of upfront testing can go a long way and give you an edge in a competitive market.
