The reason I bought these pans is because they are the only non-stick pans that can be used at 500 degrees in the oven. If you don't care, there is better value elsewhere. What can I say, great pans. They have the most even heat I've ever used. As mentioned in other reviews, when washed in the dishwasher, a black powder forms on the bottom. I suspect it's the bare aluminum on the underside that's slightly corroded. If you wash it by hand, this is not a problem. I wish there was a full 12" pan in the set, but that will cost you another $180-$250. But again, if you want to put your nonsticks in an oven at 400+ degrees, these are the ONLY pans.
