I have three kettles. One of them is a giant fight that can boil an entire gallon of water in 30 minutes. Thing is, when it's filled to the gallon it boils and squirts water everywhere so I have to work in batches. The other is an old rusty thing I've had for a few years and it ONLY boils less than a half gallon. I don't use this for tea because I don't want to contract any unknown diseases from eating rust. This is used to fill a hot water bottle that is only half full. (I bought two super hard plastic Japanese Yutanpo [?]. To withstand the heat, the other is a small but very handy brass flask, which is a modern take on the ancient Chinese charcoal hand warmers seen in many dramas It comes with a cover so it can be treated) (Also I use heating pads because the vents are in the ceiling so anything below a certain height freezes in my house.) It was cheap and fits the same as my old rusty one, but unused so I can use it to fill my thermoses with hot water, drop a tea bag in one and a lemon in the other and the temperature is cool enough for morning sips and a nice big mug of peach ginger or bedtime in a mug outdoors before bed. I can cook all three at once and get the job done in 20 minutes instead of literally an hour beforehand. My tea was great.
