Update. Unfortunately I have to put an asterisk here because the USB-DVI problem simply cannot be solved. Updated to latest drivers, tried different cables, monitors, etc. The connection to the laptop via USB-DVI is reliable, no problems. Not sure what's going on, but for those with dual monitors, look for USB-C with dual HDMI. It's 2x more expensive, but a monitor failure during meetings isn't worth the risk!
