Not such a grater for the money

Strength is achieved through the use of thick stainless steel sheet. The downside is that the pattern (holes and cut edges) is punched into the metal, so the sharpness of the edges is determined by the thickness of the panel. And fat and strong also means stupid. A patient and resourceful person can try using a tiny needle file to sharpen the holes one at a time. It really helps. Drawing on a bidirectional grater has a construction problem. All cutting holes line up when moving up and down. They should be slightly offset so the grated product hits more evenly. The grater seems to have been made in Austria by Riess Kelomat. I wonder why the manufacturer doesn't put their name on it. This will add some value and responsibility. As for the "perfect" latke potato grater, there are as many latke recipes as there are families making them, so the texture of that grater may or may not be right. It may be intended for apples. The German name for this grater is Birchersche grater, a device for grating a juicy apple into muesli. Grated apple is the classic basis for Bircher's Original Muesli. This invention in the field of nutrition was invented by the Swiss doctor Maximilian Bircher-Benner.
