If you are serious about keeping your beans fresh buy the stainless steel version

as tight as possible. I've been using them for a long time. They work great. This pottery is not. First off, the stainless steel inner lid squeezes tight when the air is expelled and stays tight as you twist the handle down to close the lid. It takes a lot of force to push through and break the seal once you turn the handle down, although you shouldn't. This means it is well sealed. The outer lid has a strong gasket that also creates a very good seal and the outer rim extends beyond the rim of the top of the container. The ceramic version is wider than the stainless steel version (you can actually put a stainless steel container inside a ceramic container), but they both use the SAME lid. The difference is that a large flexible gasket simply snaps onto the lid of the ceramic jar. There's a lot more padding around the outer edge than the lid. The seal this creates is weak and you can break the seal simply by touching the rim of the inner lid once you turn the handle down. That's very disappointing. The ceramic version's wooden outer cap has a thin, flimsy seal, and as many have pointed out, it doesn't seal well either, and sometimes just pops out again. The wooden lid barely reaches the rim of the pottery, which doesn't help either. The ceramic version looks better than the stainless, but I wouldn't invest my precious and sometimes expensive beans in it. I would rather use the stainless steel version and make sure they are well sealed. In this case, I prefer performance over looks.
