Efficient cooking area is very small
The only part that actually cooks is the small inner circle, about 6 inches in diameter. That means that on a 10-12 inch pan, the center will be very hot and the outside cold. I had eggs that were burnt in the middle but some parts flew off to the sides and stayed raw.
