Fantastic knife! I have a full set of Victorinox (formerly Forschner) and a few extra chef's knives and this santoku knife is just as good as the others. It's instantly razor sharp and is easy to sharpen in the Chef's Choice Trizor XV. Fibrox grip offers excellent grip (wet, dry or even slightly greasy). The stainless steel blade does not discolour. I regularly clean all my Victorinox knives in the dishwasher (for years!). The only problem with the dishwasher is that the handle is left with a slight white discoloration. However, the change is purely cosmetic. For the money this is a fantastic kitchen knife.
