Not as easy compared to an EdgePro-like system as I thought.

I've spent about 5 or 6 hours on this system and I don't claim to be a knife sharpening expert or anything but I've used manual water stones, the DMT leveling system and also EdgePro which I used for the last years. Do all my knives have a nice mirror finish? NO, but they also cut and slice better than most people's kitchen and field tools. factory made Griptilians make it very difficult to hold the knife steady without rocking it on the blade table). I was also annoyed by the processing of the cheap plastic and the bad feel of the whetstone (despite regular oiling). Also, using water can be pretty messy. Although it annoys me, it sharpens knives well and I've never had a problem with my knives cutting through paper (and other objects like FOOD of course). to clamp, which makes the blade much safer and also has fewer variables in the equation (e.g. the knife on the blade moves). It turns out, yes, a clamp can make sharpening more consistent. On the other hand, it also causes a lot more problems. NOW you should make a note of exactly how you held your knife in the clip when it came time to trim the blade. If you don't hold it the same way, you may not touch the bevel of the knife tip. Also, with longer knives like an 8" chef's knife, you have a noticeable crease on the part of the knife not held by the clip, so a second clip can probably be used with this system like now - other clamp-based systems. .I also had a couple of knives that I profiled with the Edge Pro that just wouldn't sharpen my wicked edge as it couldn't get the whole point off the bevel all the time when I was trying to narrow my angle when wicked To make Edge machine, I would start by hitting the clamp with your diamond stones. Be careful with this if you come from another system. Also be careful the 600 grit stone that comes with the regular kit is VERY rough, pretty lame you'll need to spend another hundred or more dollars to get your knives nice sharpness. That's fine for those with dented knives, but if you're used to SHARP knives, a 600 grit stone isn't quite right.
