Last year I bought a small Victorinox paring knife for my kitchen on wheels. The more I used it, the more I liked it. Because of this positive experience I bought this Santoku. Once you get used to the fact that you don't need a lot of weight to cut properly, this knife really starts to shine. I have since purchased their 6 inch chef's knife and am glad I did. I will keep my Henckels but will not buy them again. For the price, you can't beat Voctorinix knives. In addition, it is much easier to maintain sharpening.
