He's as sharp as they say.
I've used this many times and it holds its stellar sharp edge perfectly and lets the hone run fast from time to time just to be sure. Slices tomatoes transparently thin. The only thing that bothers me is that it's too short for my bamboo bread slicer. I have to make short cutting movements with it because it bumps against the wall rails. I wish I had bought a longer one now.
