The bottom line is that I bought the wrong thermometer. Recording higher temperatures (over 290 degrees Fahrenheit in my case) requires more than 4 inches of oil. On first use, I wanted to increase the temperature from just under 4 inches of oil to 350 degrees Fahrenheit. The reading rose steadily to 290 degrees Fahrenheit and then stopped. My first reaction was that more heat was needed, so I turned on the burner. The reading stayed at 290. I suspected something was wrong and tried a known accurate thermometer - the oil temperature was 440 degrees Fahrenheit and rising quickly. I don't blame the manufacturer. I used his product differently than it was specifically designed. tells you I bought the wrong thermometer? Because I want to warn potential users so they know there may be problems getting higher temperature readings. You could end up with dangerously overheated oil. From other reviews I saw that this limitation is not present in all thermometers of this model. Pros of this device: Easy to calibrate, accurate readings after calibration, secure potty attachment, easy to set probe depth, easy to read Cons: Doesn't always stay calibrated, BP readings in water can vary from 20 to nearly 50 degrees Fahrenheit.
