I bought this to help me control the temperature of my milk when heating it to make yogurt. It's almost 13 inches long and has a great clip that allows you to raise or lower the thermometer stem to where you want it. If you pull it out of the holder and run your fingers over it from below, you will feel the thermal sensors. The bottom line is that I bought the wrong thermometer. Recording higher temperatures (over 290 degrees Fahrenheit in my case) requires more than 4 inches of oil. On first use, I wanted to increase the temperature from just under 4 inches of oil to 350 degrees Fahrenheit. The reading rose steadily to 290 degrees Fahrenheit and then stopped.
