Can make a good knife blade better than a new one

Expensive but if you're a fan of keeping your tools sharp, this is a must have addition to the Tormek T-4. I am a professional chef and my knives are an important and expensive investment and an extension of my hands. I expect my knives to perform the way my customers expect me to. The Japanese water stone helps with this. When I've finished working with the blade, it's literally sharper than new and more carefully polished. I examined the blade under magnification and was amazed at the reflection. If you know anything about sharpening, then you know that the better polished the blade, the stronger it is. Once you've got your tools up to the sharpness you expect, move on to the next level when you're done with the Japanese water stone. If you save yourself the edge after that, this is the only wheel you actually need.
