First of all, I agree with other reviewers that dough consistency is important here. The first batch of gnocchi I made was too wet. So he stuck to the board and made a big mess. For the second try, I switched to a recipe that baked potatoes, not boiled them. Huge improvement. Much better dough and the dumplings rolled well. The board does what it should. It's not bulletproof or stronger than steel. This is a simple wooden board with ribs and a handle. Roll out a fairly firm dough on the board and you get gnocchi with nice ribs. The grip seems suitable for the job. It wasn't difficult to find a convenient way to hold the board and roll pieces of dough on it. It was pretty straight forward. I think the board will last for many years and make lots of delicious gnocchi out of it. Try it. I think you'll be glad you did.
