The chef's knife in the photo (along with your lovely sharpener) dates to the late 1940's according to my wife, its primary user. It belonged to her late father, who was a chef for most of his adult life. When we inherited it, it required little maintenance and its carbon steel requires constant attention to keep its cutting edge sharp. Now that Ann uses a salad knife with lots of lettuce on a daily basis, the 10-inch blade will be a real help when picking up shredded lettuce.
