
I have been using the alu version of the Bialetti Moka Express for many years. However, due to recent research on the use of aluminum utensils and the possibility of metal leaching into coffee, I decided to try their stainless steel version. Reviews seemed to suggest it was about as good, and while it's labeled for induction hobs, it should have worked well on gas hobs as well. Well, in my experience, this is far from the case. I've done many tests between 2 and Musa that just don't work. For example, in a test with plain hot water (starting with pre-boiled water at around 200 degrees), the aluminum version took 56 seconds to start oozing, while the Musa took almost 4 minutes. And when it really started, it was a lot slower. That was on the same burner, set to the highest setting. In addition, a lot of water remains in the lower chamber, while this is almost completely empty in the aluminum version. Coffee grounds take forever, and the taste is terrible - burnt and bitter. Tried many grind settings, no improvement. I tried using a burner to mimic a flat cooking surface and it was a little better. Very disappointing purchase, I don't know if I had a design flaw but it is being returned.
