These knives stay sharp, they do a great job on anything but frozen objects or bones. They break if someone tries to cut through the bone or go through something hard like frozen dough. I have several stainless steel knives that need to be sharpened annually. Kyocera knives can take much longer between sharpenings. I also like that they can be washed in the dishwasher without damaging them. The three sizes included in this set are the sizes I use most in the kitchen. These are very high quality knives. I've learned to enjoy these knives instead of the stainless steel knives I have.
